A couple of days ago I wrote about the Rachael Ray show and the high fiber brownie recipe that was made. Well, I made them! On Rachael Ray’s site–you can get the recipe to make brownies from scratch, but in this house–nothing beats Betty Crocker brownies with the frosting packet included! They are our favorite–nothing from scratch even compares! Anyway–I pureed the whole can of black beans–liquid and all–and I added two little cups of baby food prunes. Beat them together and then added the brownie mix and ingredients. When they came out of the oven-the first thing I noticed was that they didn’t rise as much as normal–but that just made them a bit more fudgy. We let them cool–and put the chocolate frosting on. How did they go over with the kids??? They loved them! The oldest keeps proclaiming that they are the best brownies he’s ever had–which is good since I made them for him! For an adult–they are just a little thick–with a ‘new’ texture–but honestly–they tasted better than store bought brownies–and each brownie carries the full days worth of fiber! So easy to get this kind of fiber into them!

Don’t mind the look of the top of the brownies–if you don’t have a two year old running his hands through the frosting–your’s won’t look like this!!

I have never hidden the fact that I’m a bit on the ‘rotund’ side! It’s not something I enjoy, but over the past 10 years it is something that I haven’t been able to change. Try as I may, diet as I might, I can not shed a pound. I don’t have the worst eating habits in the world, unless you consider not eating three full meals a day and snacking on the easiest thing to get your hands on ‘the worst’. But it certainly isn’t conducive to really concentrating on getting myself to the weight I really would like to be.

I took a free interactive eating survey over at www.ShrinkYourself.com and found a few new things about me. I’m not really one who eats out of loneliness, but boredom eating may be a little closer. Although it really does come down to the, “I’m hungry now, what is there to eat that requires little preparation?” So I’ve been working on having a little healthier choices around for my snacking needs. I also started to eat breakfast. Not a big one, but considering I don’t normally eat it…it’s big! My biggest change? I’ve given up soda. All soda, but the killer will be my beloved Diet Coke. This morning was the last of my caffeine withdrawal headache, so we are smooth sailing from here on out!

Why is it that restaurants use big plates? Well, I really do know the answer to that ’cause I asked the chef. It has something to do with presentation…but honestly, I just look at all of the open space on the plate and feel gypped on the price. Last night was no exception.

We went to our local Olive Garden and for the first time EVER I ordered something other than Fettuccine Alfredo. I got the Tour of Italy (with Fettuccine Alfredo) and it came out on this huge platter with a ton of open space. So I immediately start feeling like we are paying way to much. Mind you, I couldn’t finish all of my dinner because I was so full-so I really was OK on the pay side of it, but still–full or not–I don’t need such a big plate!!

This time of year is full of gifts I need for men young and old! Father’s birthdays, husband’s birthdays, graduation and Father’s Day. It all makes for an expensive 90 day period! I know what I’m getting the Chef for his birthday though. He’s getting something like this…

This Seiko SGF206 Men’s Gold Plated Dress Watch is something I think he would love for dressy events. I chose this one because it’s dressy and I love the gold color, but it’s also sturdy. It’s made from stainless steel, but the face has been fully integrated into the bracelet. I also love how the face shimmers and the crystal covering is scratch resistant. We didn’t used to have many dressy events, but now there seem to be more than ever. Weddings, restaurant openings and charity events, I want him to have something that just sparkles. Not only is the selection of seiko watches amazing over at BlueDial.com, their prices are affordable as well. This watch is $90 cheaper than the normal retail price, and that is exactly what I need when making this kind of purchase.

I don’t know what he’ll get for Father’s Day or even what I’ll get for my dad for his birthday, but it’s always nice to find a site that offers great gift ideas at a fraction of the cost!

Ok—I’m totally stealing this from Dax Desai.com but honestly—it was the first time someone actually explained taxes really well! I don’t even drink beer–but understood this one! I’ve always wonder why people get so unhappy when we give “the rich” tax breaks…well…duh…because they are the ones that pay MOST of the taxes!! We are a Capitolistic society…it works…some people have more than other…if you want more…work harder! But get off the pity party of tax breaks for the rich, and make your own life better!

Suppose that every day, ten men go out for beer and the bill for all ten comes to $100. If they paid their bill the way we pay our taxes, it would go something like this:

* The first four men (the poorest) would pay nothing.
* The fifth would pay $1.

* The sixth would pay $3.
* The seventh would pay $7.
* The eighth would pay $12.
* The ninth would pay $18.
* The tenth man (the richest) would pay $59.

So, that’s what they decided to do. The ten men drank in the bar every day and seemed quite happy with the arrangement, until one day, the owner threw them a curve.
“Since you are all such good customers”, he said, “I’m going to reduce the cost of your daily beer by $20”. Drinks for the ten now cost just $80.
The group still wanted to pay their bill the way we pay our taxes so the first four men were unaffected. They would still drink for free. But what about the other six men - the paying customers? How could they divide the $20 windfall so that everyone would get his “fair share?”
They realized that $20 divided by six is $3.33. But if they subtracted that from everybody’s share, then the fifth man and the sixth man would each end up being paid to drink his beer. So, the bar owner suggested that it would be fair to reduce each man’s bill by roughly the same amount, and he proceeded to work out the amounts each should pay.

And so:

* The fifth man, like the first four, now paid nothing (100% savings).
* The sixth now paid $2 instead of $3 (33%savings).
* The seventh now pay $5 instead of $7 (28%savings).
* The eighth now paid $9 instead of $12 (25% savings).
* The ninth now paid $14 instead of $18 (22% savings).
* The tenth now paid $49 instead of $59 (16% savings).

Each of the six was better off than before. And the first four continued to drink for free. But once outside the restaurant, the men began to compare their savings.
“I only got a dollar out of the $20,” declared the sixth man. He pointed to the tenth man, “but he got $10!”
“Yeah, that’s right,” exclaimed the fifth man. “I only saved a dollar, too. It’s unfair that he got ten times more than I!”
“That’s true!!” shouted the seventh man. “Why should he get $10 back when I got only two? The wealthy get all the breaks!”
“Wait a minute,” yelled the first four men in unison. “We didn’t get anything at all. The system exploits the poor!”
The nine men surrounded the tenth and beat him up.
The next night the tenth man didn’t show up for drinks, so the nine sat down and had beers without him. But when it came time to pay the bill, they discovered something important. They didn’t have enough money between all of them for even half of the bill!

And that, boys and girls, journalists and college professors, is how our tax system works. The people who pay the highest taxes get the most benefit from a tax reduction. Tax them too much, attack them for being wealthy, and they just may not show up anymore. In fact, they might start drinking overseas where the atmosphere is somewhat friendlier.

Ingredients:

* 4 ea 5-6 oz Tilapia Fillets
* Non-stick Cooking Spray
* ½ lb. Linguini, cooked

Parmesan Crust:

* ½ cup Panko Bread Crumbs*
* ½ cup Parmesan Cheese, pre-shredded

Parmesan Base:

* ½ cup Parmesan Cheese, pre-shredded
* 1 Tbsp. Parsley, dried
* 10 oz Prepared Refrigerated Alfredo Sauce

Parmesan Cream Sauce:

1. 2 Tbsp. Fresh Basil, Chopped
2. ¼ cup Chablis or Chardonnay Wine, optional
3. ¼ cup Half and Half

Preparation:

1. Preheat oven to 425 degrees.
2. Spray a 9X13 baking dish with Non-stick Cooking Spray. Place the 4 Tilapia fillets in the dish and set aside.
3. In a small bowl, mix the Panko bread crumbs and ½ cup Parmesan cheese to make the crust for the topping. Set aside.
4. To assemble the Parmesan Base, place ½ cup Parmesan cheese, 1 Tbsp. parsley and the prepared Alfredo sauce in a medium bowl and stir well. Remove ½ cup of the mixture (reserving the rest to make the Parmesan Cream Sauce) and brush onto the 4 pieces of Tilapia, making a thick, even covering on the fish. Evenly sprinkle the Parmesan Crust on top of the fish. Bake on the top shelf of the oven for 15-20 minutes or until fish reaches 140-150 degrees and the crust is golden brown.
5. Meanwhile while the fish is baking, make the Parmesan Cream sauce. Place the remaining Parmesan Base in a medium sauce pan, add the fresh Basil, Wine, and Half and Half and heat over medium heat until the sauce is simmering, stirring often.
6. Toss the Parmesan Cream Sauce and the Linguini together and serve with the Parmesan Crusted Tilapia. Sprinkle with additional Parmesan cheese if desired.

It is about time for a fly away! I know, it’s really not a good time, but if you’ve been reading on my other blog you can probably see that I would love nothing more than to drop everything right now and catch a flight to some exotic destination all by myself. I love that these days you can find tremendous savings by booking your travel online. It isn’t just continentally either, online you can even book a flight to Dubai. That’s on the other side of the world, and you can save a bundle.

What’s kind of cool about Dubai…in Children’s City there is an exhibit on Sue, the T-Rex. This is really fun for those of us living around Chicago, because Sue is on display in the Field Museum downtown. So to find that children across the world are getting to learn about this amazing dinosaur is astounding to me. It really is just a small world.

With DialAFlight.com you can find amazing savings on many great destinations. I don’t have a passport at the moment, so Dubai may be out of the question…but something local would be really fun!

I’ve just joined the Discovery Health Challenge. Not that this is the blog for such things, I did think I should let you know that when the restaurant fun starts up again (life home with sick kids kinda cuts out on our Restaurant Hopping!!) there will be more of a health conscious choice coming from me. I think you’ll still get the thoughts on the “good” stuff, as the Chef is still ordering in that regard!

It’s an 8 week challenge–and I’m hoping for 30 pounds! Ok–maybe not all of them in the next 8 weeks, but hopefully a good start!!

We went out for dinner the other night and I was surprised to find that not only did the restaurant have a very homey atmosphere, but they had decorated using item that we have in our home and one that I’m dreaming of! I was amazed! We have an antique stove sitting in the basement of our old house. It’s AWESOME! But honestly, what do you do with it? Then I walked in and they have nearly the same stove sitting in their restaurant. They’re using it as a showpiece in a grouping with greenery, a grandfather clock, and baskets. I need to go back with my camera because like I said, I have the stove and I can probably find the baskets and greenery and let me just tell you about one of the grandfather clocks I’m saving to purchase!

Howard Miller clock is just about what the restaurant had. It’s a new and beautiful clock, but has the old fashioned look that will match my stove just perfectly.

I have a Howard Miller clock in my living room, but it is a mantle clock. It’s beautiful and it’s chimes are enchanting (my favorite part), so adding another one to my house would be awesome! And it would be the perfect heirloom to pass down to my children. I would hope it would mean as much to them as it would to me. Especially having had a grandfather clock in my house growing up. It just seems to make the house a little warmer!

On April 16th, my oldest son has a field trip to the state capitol in Springfield. I’m amazed by this. When I was in school we went on the same field trip to our state capitol, but since we lived in Salt Lake already, it was like a 20 minute bus ride. This is a 2.5 hour bus trip and they won’t get back until many hours after school is out. Just seems like a “big” trip for 10 year olds.

I didn’t sign up to go as a chaperon. I have 2 smaller children at home with no one to watch them. But I am thinking about following the bus down, but not to go on the tour. Why would I even consider such a thing…Well, the closest “Sonic” to our house is in Springfield. Yes, THAT “Sonic”. We had them all over in Arizona. We even had one or two pop up in Utah. But they don’t exist by the truckload here in Illinois. I’m not sure driving 2 1/2 hours for lunch is the brightest idea, as the added $50.00 in gas might just make that burger a little out of my price range, but oh…the Banana Cream Pie Shake…that’s well worth $50.00!!
